To Serve

Cut with a very sharp knife and make individual servings. Serve immediately.

Chocolate Pudding in Graham Cracker Crusts

 Graham Cracker Crust

1/2 cup pecans
1 cup walnuts
1/4 cup caoca powder
1/4 cup unsweetened coconut flakes
1/2 teaspoon cinnamon 
6 or 7 Medjool dates
Handful sugared pecans (pralines)
A pinch of good salt

Place nuts in food processor and pulse chop until broken into small pieces depending how course or fine you like your crust. Add remaining ingredients and pulse chop until blended. Using your thumb and forefinger, pinch a small bit of the mixture together. If it sticks well then it will press into small moulds. If it does not stick together, add more dates. This is also the time to add more cocoa powder, pralines or cinnamon.

 

Chocolate Pudding
 Ingredients: 

  2 avocados, pitted and peeled, avocados should be ripe but not overly soft
  2-3 tablespoons coconut oil
  1/2 cup of maple syrup
  1/2 cup of cacao powder
  1 teaspoon of vanilla extract
  1/4 teaspoon cinnamon (optional)
  pinch of salt (optional)

Instructions: 

1. Put all the ingredients into a blender.

2. Blend until smooth, using blender tamper to keep mixture moving.
3. Spoon into a dish and chill
4. Garnish with your favorite tasty topping - shaved chocolate, nuts.
Tip:

More sweetener or cacao can be added to tast
